One major difference between flash and infrared night photos is that the infrareds are strictly black-and-white photos. The other difference most people notice immediately has to do with the reflections off animals' eyes. With flash, you often get high-beam spotlight eyes...
...while with infrared, it's more like dim driving light eyes.
